Greenest kitchen on earth




 

 

The Green Restaurant Association recently announced that the Muse School Kitchen is the Greenest Restaurant in the World.

Muse is now upgraded to a 4 Star Certified Green Restaurant with over 550 Green Points, 185 Green Points more than last year’s 4 Star restaurant.

Muse, a private Calaba- sas school founded in 2006, took two main steps to reduce the restaurant’s environmental impact.

The first is 100 percent solar powered electricity. The lights, AC, electric cooking equipment, refrigerators and freezers are all powered by the sun.

The second change that MUSE implemented was changing its menu to be lower on the food chain—plant-based with no cheese, eggs, chicken, beef or fish.

Muse didn’t start as a plantbased kitchen. Hoping to reduce the school’s environmental impact, Muse made the decision a few years ago to slowly shift to a plant-based menu.

Over an 18-month period, MUSE gradually replaced animal based menu items with plantbased items while educating its c o mmu – nity about the environmental benefits of a plant-based diet.

Highlights of the school’s green accomplishments are: On-site food production, 100 percent plant based, full-scale recycling program, composting, high efficiency refrigerator, ceiling fan, LED lighting, 100 percent solar, 0.5 gallon-perminute faucet aerators, recycled and reusable products and fewer toxic cleaning products.
