Nothing beats dinner and a show, and if that show is being presented at one of the elegant Thousand Oaks Civic Arts Center venues, then dinner must be at 2087 American Bistro.

With a vision toward operating a restaurant that could serve both discerning theater-going clientele while appealing to a broad-based spectrum of diners, owners Charles Burchez and Chuck Burtzloff opened their eatery on Thousand Oaks Boulevard across from the Civic Arts Center.

With its hardwood floors, mood lighting and persimmon-colored walls, the bistro has a casual feel of elegant sophistication. With an open kitchen, guests can enjoy watching their chef prepare the culinary delights, while a private room with its own outdoor patio offers an intimate ambience for special occasions. Let’s not forget the full service bar where patrons can sit and enjoy cocktails before dinner or a show.

Fashioned as a contemporary American restaurant that showcases simple, quality food, yet inspired by close proximity to a stylish center for the arts, chef Alex Molina creates his own exciting culinary show.

Using only the freshest ingredients, Alex follows the seasons to change the menu about three times a year. The winter menu will feature a risotto with foie gras (duck liver), porcini mushrooms and a pinot noir sauce.

To stay on theme with the dish, your Food Thyme gals enjoyed the risotto with a bottle of 1999 Sine Quanon "OX" Pinot Noir from Oregon that had medium ruby color and was very smooth. We sampled a New Zealand buttery black cod served with Peruvian purple potatoes and topped with a caper tarter sauce that was delicious, and the mesquite grilled pork chops were sweet and tender, seasoned with Middle Eastern spices and topped with dried fruit chutney.

As for dessert, the soft-centered chocolate soufflé deserved a standing ovation. Our waiter Gunter was well informed on the menu, utterly gracious and charming, and his warm, caring personality made our evening at the bistro all the more enjoyable.

With the busy holiday season approaching, not everyone has time to cook, and this is one of the few establishments that offers a quality Thanksgiving menu.

Imagine wild mushroom and breakfast sausage stuffing, roasted garlic mashed potatoes, and maple port sweet yams as a few of the trimmings you can enjoy with turkey. Alex estimates he will roast about 100 turkeys that are also available to go.

From our kitchen to yours, may you have wonderful thyme this Thanksgiving.
